10 Fresh Berry Recipes to Make This Spring

Easy, Elegant Ways to Use Fresh Spring Berries

It’s spring, which means fresh berries are at their best - sweet, juicy, and full of flavor. While they are delicious by the handful, this is the time to let them shine in your cooking. Today I’m sharing 10 of my favorite berry recipes, starting with Blueberry Chicken Salad with Mango Vinaigrette. (If you have my cookbook “Fresh Tastes" you’ll recognize this recipe because it’s on the cover!).

The rest of this collection offers even more ways to celebrate the season’s berries. Whether you’re hosting a festive brunch or just want an easy dessert for a Tuesday night, these recipes have you covered. From baked french toast with berries to quick and easy individual blueberry cakes and a chilled strawberry pie, these dishes work perfectly for everyday meals and spring entertaining alike.

Main Dish Salad

Blueberry Chicken Salad with Mango Vinaigrette

A well-balanced, composed salad that’s paired with a bright, homemade Mango Vinaigrette - perfect for a casual lunch or warm-weather entertaining.

Breakfast & Brunch

Cinnamon Raisin Bread Baked French Toast

Cinnamon-raisin bread slices are baked in a creamy custard and topped with fresh berries for a bright, colorful finish. One of my mom’s favorites!

Cheese Blintz Soufflés

A baked variation on traditional cheese blintzes, with a creamy cheese filling and a bold blueberry-balsamic sauce.

Lemon Blueberry Muffins

A classic flavor combination, these muffins are super moist with bright citrus flavor, and are prepared with no blender or mixer needed.

Blueberry Buttermilk Pancakes

Tender, smoky pork that captures the essence of a Southern backyard barbecue.

Sweet Treats

Individual Blueberry Cakes

Light, tender, and easy to prepare, these little cakes are the perfect ending to a spring dinner.

Strawberry Rhubarb Crisp

The quintessential spring duo; in my mom’s version, sweet-tart, jamlike fruit filling is baked with a hint of fresh basil for a subtle twist.

Lemon Ginger Blueberry Tart

A flavorful gingerbread cookie crust with a silky lemon-marscapone filling and a topping of fresh blueberries, this tart is well-balanced and elegant.

Frozen Strawberry Cream Pie

A refreshing, make-ahead dessert with a light, airy, creamy filling and a crunchy walnut crust.

Easy Berry Cobbler

This comforting classic is one I’ve been making for over 40 years. It’s quick & easy to prepare with only 5 ingredients.

I hope these recipes inspire you to pick up an extra pint (or three) of berries on your next market run. Whether you’re serving our blueberry chicken salad for a sunny lunch in the garden or pulling a warm cobbler out of the oven, I’d love to hear which one becomes your new spring favorite.

Happy cooking!
